Duck with Orange Sauce

Ingredients necessary to prepare:

1 carrot

1 onion

4 tablespoons oil

1 duck

3 oranges

teaspoon salt

teaspoon white pepper

150 ml stock

2 teaspoons corn flour

The recipe:

You have to chop the carrot. Then quarter the peeled onion. Now you have to heat up the oil in a tin. Put the vegetables inside and then place the duck in the middle. Roast in an average hot oven (200 degrees) for about 2 hours. Please remember to turn the duck on the other side during the roasting. Then chop the peels of oranges into small strips. You have to squeeze the orange juice too. Then remove the duck and skim it about a tablespoon of the fat left in the tin. The onions and carrots should be robbed through a sieve. Then return them to the roasting tin. The sediments scraped up from the boil and thickened with the corn flour are served as sauce. At the end, decorate the duck with parsley.
